Production area: vineyards on the north side of Etna, volcanic, stony soil,
dry, draining and rich in minerals.
Contrada Calderara, municipality of Randazzo (CT), 650 meters above sea level
Vineyards: espalier with high planting density.
Yield per hectare: 50 quintals.
Vinification: soft pressing of the grapes, fermentation at controlled temperature.
Organoleptic characteristics:
Colour: pale straw yellow with greenish reflections.
Bouquet: delicate and elegant, with hints of broom and hawthorn;
in the final green apple and yellow fruit.
Taste: fresh and very mineral, pleasantly acidic.
Pairings: white meat; fish and shellfish; soft and semi-aged cheeses,
also excellent to accompany stronger and more intense cheeses; battered vegetables;
first courses based on fish or vegetables; broth both vegetable and meat.
Serving temperature: 12 degrees.
Alcohol content: 12,5-13% vol.
