The processing process takes place with the use of cold water at a temperature less than 15 °, in order to ensure an optimal cooking hold of the pasta.
Bronze drawing allows the creation on the surface of the pasta of small abrasions that thus make it able to retain sauces and seasonings in an exceptional way.
Pistachio Pasta is also dried slowly at low temperature, to preserve organoleptic characteristics and nutritional properties.
