Almonds

Almonds are a widespread ingredient in different traditional cuisines in the Mediterranean area, especially as regards Sicilian cuisine, both for sweet and salty dishes. They're handpicked with canes (flexible sticks from 3 to 5 metres long) from august to september and are used both in salt dishes (Pesto Trapanese) and Pastry (confetti, biscuits, pastries, marzipan).
